fully loaded peanut butter & raspberry jelly parfait

A delicious keto friendly layered dessert with raspberry jam, peanut butter chia seed pudding and some mouth-watering toppings is always a treat to the eyes and the taste buds. Love Good Fats peanut butter and jelly bar makes a delicious addition to this recipe.

INGREDIENTS

for raspberry jelly
1 cup frozen raspberries
1 tbsp lemon juice
1 tbsp chia seeds

for peanut butter chia seed pudding
1 cup unsweetened plain almond milk
1⁄2 cup full fat coconut milk
5-10 drops stevia
2 tbsp natural salted peanut butter (creamy or crunchy / plus more for serving)
1/3 cup chia seeds

toppings​:
1 Love Good Fats Peanut Butter & Jelly Bar, chopped
1⁄2 cup fresh strawberries
1 tbsp peanut butter

DIRECTIONS

1. Add the frozen raspberries to a small bowl and microwave for 30-45 seconds or until melted. Add the lemon juice and chia seeds, stir and set aside to thicken.

2. In a separate small bowl, mix together the almond milk, coconut milk, stevia, peanut butter and chia seeds. Set in the fridge for 2 hours (or overnight).

3. Layer the chia pudding, raspberry jelly and additional peanut butter in mason jars.

4. Top with additional peanut butter, fresh strawberries and Love Good Fats Peanut Butter & Jelly chunks
